GERMAN POTATO SALAD 
5 or 6 lg. potatoes, peeled and sliced
1 lb. bacon
1 lg. onion, cubed
1 rib celery, diced
1/2 c. vinegar
3/4 c. brown sugar
Salt and pepper to taste
Water

Put potatoes in a saucepan and cover with water. Cook until tender. Drain.

Cut bacon in 1 inch pieces, put in fry pan and fry until crisp. Add vinegar, brown sugar, celery and onion. Heat to boiling.

Put potatoes in roasting pan, pour the vinegar mixture over, add salt and pepper and stir. Taste for sweetness, add more vinegar or sugar if needed. Place in a 350 degree F. oven for 45 minutes. Serve hot.
