CAULIFLOWER WITH MORNAY SAUCE 
1 large head cauliflower
freshly grated bread crumbs
1/3 c. melted butter

Mornay Sauce:

1 tbsp. butter
1 tbsp. flour
1 c. milk
1 tbsp. grated Parmesan cheese
1/2 tsp. mild prepared mustard (preferably Dijon type)
salt and pepper to taste

Melt butter in saucepan; remove from heat. Add flour; stir with wire whisk. Return to a moderate heat. Add milk gradually, stirring constantly until thickened. Add remaining ingredients.

Wash, trim and separate cauliflower into florets; place in vegetables steamer. Steam until tender.

Arrange cauliflower around edge of baking dish and sprinkle liberally with bread crumbs. Spoon Mornay Sauce into center of baking dish. Broil until crumbs are lightly browned.

Serves 4 to 6 people.
