MUSTARD-MARINATED STEAK 
2 lbs. beef bone-in chuck steak, about 3/4" thick
2 tbsp. lemon juice
2 tbsp. oil
1 tbsp. Dijon mustard
1/4 tsp. pepper
2 tbsp. water

Pierce beef on both sides with fork. Place beef in glass or plastic dish. Mix lemon juice, oil, mustard and pepper; pour over beef. Cover and refrigerate, turning occasionally, at least 4 hours. Place beef or rack in broiler pan; reserve marinade. Set oven to broil or 550 degrees. Broil beef with top about 3" from heat until medium doneness, about 10 minutes on each side. Heat reserved marinade and water to boiling in 1 quart saucepan, stirring occasionally; pour over beef. Serves 6 to 8.
