BACON - BEAN SOUP 
2 strips bacon, cut in pieces
1/2 onion, chopped
1 clove garlic, crushed
1/2 stalk celery chopped
16 oz. can white navy beans with juice
2 1/2 c. water or chicken broth
2 oz. broken spaghetti
1/2 tsp. dried sweet basil
Pinch dried oregano
1 tomato
Salt
Pepper

Fry bacon. Add onion, garlic and celery. Saute 1 - 2 minutes while skinning and chopping tomato. Add tomato and remaining ingredients. Simmer for about 30 minutes. Yields 6 cups. 2 ounces sausage can be substituted for bacon, add 1 tablespoons leftover bacon fat.
