CHICKEN SUDADO 
1 whole chicken cut up -or-
6 chicken breasts
l large onion, chunked
l large tomato, chunked
1 1/2 T. ground cumin (comino)
2 T. salt
2 1/2 T. garlic powder
1/4 cup safflower oil
3 T. safflower oil
Approximately 4 cups of warm water.

Sweating Chicken (Chicken Sudado)

Sauté onion and tomato until translucent and softened. Set aside in a bowl.

Add chicken pieces to pot with 3 T. oil. Sprinkle salt, garlic powder and ground cumin over chicken. Add sauteed tomato and onion on top of the chicken. Add approximately 4 cups of water (level with top of the chicken), NOT ABOVE. This must sauté in juices and ingredients, NOT BOIL in excess water. Sauté for approximately 35-45 minutes on medium heat until sauce thickens.

Add potatoes on top of mixture after it begins to sauté. Check bottom of pot and chicken to ensure its not sticking.

Reduce temperature as necessary to finish sautéing.

You may use this over rice if you do not use the potatoes as a side dish.
