DELUXE APPLE TART 
1 c. all-purpose flour
1/8 tsp. salt
2 tbsp. sugar
5 tbsp. shortening
6 med. sized Golden Delicious apples
1 (12 oz.) jar apricot preserves
2 tsp. lemon juice

Or make your own favorite mixture for 9" pie pan. Fit pastry into 9" pie pan; refrigerate. Peel and core 3 apples, cut into chunks. In blender, puree 1/4 cup water with 1/3 of apple chunks. Add remaining chunks, a third at a time; blend until smooth. Pour into 3 quart saucepan. Stir in 1/2 cup preserves and 2 tablespoons sugar. Over medium high heat, heat to boiling. Cook, uncovered 20 minutes or until very thick, stirring to make 1 1/2 cups applesauce. Quarter remaining peel, core, cut into 1/8" slices. Toss with lemon juice and 2 tablespoon sugar. Preheat oven to 400 degrees.

Spread applesauce over pastry; arrange slices on top. Bake 45 minutes or until apples are tender. Remove pie to wire rack. Strain remaining preserves through sieve into saucepan, over medium heat, cook 2 minutes or until thick enough to coat a spoon. Brush over pie. Cool.
