VEGETABLE-POTATO CASSEROLE 
6 potatoes
6 carrots
1 sm. onion, sauteed
1 (13 oz.) can evaporated milk
1/2 stick butter
Salt, pepper, garlic powder
American or Cheddar cheese slices
Bread crumbs

Peel and cook potatoes and carrots together. Mash vegetable with fork. Add sauteed onion, butter and seasonings to taste. Mix together. Add evaporated milk and mix again.

Pour in casserole, add slices of cheese on top, sprinkle with bread crumbs and dot with butter.

Bake at 400 degrees for 45 minutes, uncovered. Can be made ahead of time, refrigerated and reheated.
