COCONUT OATMEAL COOKIES 
2 c. flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
3/4 c. butter
1 c. sugar
1 c. brown sugar
2 eggs
1 1/2 c. quick oats
1 c. coconut
1 tsp. vanilla
1/2 c. nuts
1 pkg. butterscotch chips (or chocolate, peanut butter or vanilla chips)

Sift flour, baking soda, baking powder, and salt. Cream shortening and sugars until fluffy. Add eggs, one at a time. Mix well. Add other ingredients and mix well. Roll dough into 1 inch balls. Place on ungreased cookie sheet. Bake at 375 degrees for 8 to 10 minutes. These are moist and chewy when undercooked. Makes 6 to 8 dozen cookies.
