MICROWAVE MEAT LOAF 
1 1/4 lb. meat loaf mixture (3/4 lb. ground beef, 1/2 lb. ground pork)
1 c. milk
1/3 c. dry bread crumbs
1 tsp. salt
1/4 tsp. pepper
1 tbsp. vegetable oil
1/2 c. chopped onion
1 c. (1 lg.) shredded carrot
1 egg
2 tbsp. mustard
Pepper rind for garnish

Combine milk, bread crumbs, salt and pepper in a small bowl. Let stand 10 minutes for flavors to blend.

In microwave safe dish, combine oil and onion. Microwave at medium high power 5 minutes. Stir once during cooking time. In bowl, combine ground meat, milk mixture, carrots, egg and 1 tablespoon mustard. Blend well. Add onion mixture. Combine.

Spread mixture in even layer in dish. Spread remaining mustard on top. Microwave at high power for 10 minutes. Rest 5 minutes covered. Microwave at high power another 6 to 8 minutes. Let stand 4 to 5 minutes before serving. Serves 4.

Since microwave ovens vary in power, you may need to adjust your cooking time.
