MOTHER'S SYRUP SPONGE CAKE 
1/2 c. shortening
1/2 c. sugar
1 egg
1 c. syrup (Cane Patch)
2 1/2 c. flour (plain)
1 1/2 tsp. baking soda
1 tsp. cinnamon
1 tsp. ginger
1/2 tsp. salt
1 c. boiling water
Lemon Sauce recipe

Cream shortening and sugar, add egg and beat well, add syrup and mix. Sift together all dry ingredients and add to first mixture. Beat in boiling water. Bake in 2 layers or sheet pan lined with wax paper. Bake at 350 degrees for 20 minutes.

LEMON SAUCE:

3 egg yolks
Juice of 1 1/2 lemons
Rind of 1 lemon
1 tbsp. flour or corn starch
3/4 c. sugar
2 tbsp. butter
1 tsp. salt
1 c. boiling water

Cream sugar, flour and butter. Add lemon juice and rind. Add egg yolks and beat well. Add boiling water. Cook in double boiler until thick.
