CAULIFLOWER AU GRATIN 
4 c. chopped cauliflower
2 tbsp. butter
1 clove garlic
1/2 tsp. salt
2 tbsp. flour
Dash of cayenne pepper
1 c. whole milk or half and half
1 c. cheddar cheese, grated
1 c. whole kernel corn
1 tbsp. chopped parsley

Cook cauliflower in salted water until tender. In pan melt butter, add garlic and saute 1 minute or so. Stir in flour and pepper. Gradually add milk, stir until slightly thickened. Place cauliflower, corn, parsley and 1/2 cup grated cheese in shallow baking dish. Cover with sauce and remaining cheese and bake until hot and bubbly.
