ZUCCHINI PICKLES 
1 qt. white vinegar
2 c. sugar
1/4 c. salt
2 tsp. celery seed
2 tsp. ground turmeric
1 tsp. dry mustard
5 zucchini, cut into slices
1 qt. onions, thinly sliced (4 or 5)

In a large kettle, add vinegar, sugar, salt, celery seed, turmeric, and mustard. Bring to a boil. In a small bowl, place zucchini and onion and pour boiling liquid over them. Let stand one hour, stirring occasionally. In a saucepan bring mixture to a boil and simmer for 3 minutes. Continue simmering while quickly packing one jar at a time.
