BANANA BREAD 
2 1/2 c. flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. ground cinnamon
1/2 c. applesauce
1 c. sugar
3 egg whites
3 very ripe bananas, peeled & mashed (2 c.)
1 tsp. vanilla extract

1. Preheat oven to 350 degrees. Grease and flour a loaf pan. Combine flour, baking powder, baking soda and cinnamon. Set aside.

2. In a larger bowl, beat together applesauce, sugar, egg whites, banana and vanilla. Add flour mixture all at once and stir gently to blend.

3. Pour batter into prepared loaf pan and bake for 50 to 60 minutes or until knife inserted comes out clean. Cool bread completely before slicing. NOTE: Wrap loaf tightly and store for up to 1 week or freeze for up to 2 months. Low fat, low cholesterol.
