CELERY DILL SAUCE 
4 tbsp. butter
1 1/2 c. diced onion
4 c. diced celery
2 tbsp. minced fresh dill or 2 tsp. dried
1 c. water
1/2 c. dry white wine
1/2 c. sour cream
Salt and pepper

In large saute pan, melt butter and saute onion, celery and dill for 3 to 5 minutes until onion is limp.

Add water and wine. Simmer until vegetables are tender 5 to 10 minutes. Transfer the sauce to a processor or blender and blend until smooth. Reheat the sauce and add the sour cream season to taste with salt and pepper. Serve immediately over chicken or fish.
