HUEVOS DE SANTA FE 
1 (10 oz.) can whole green chilies
1/2 lb. Mozzarella cheese
1 c. skimmed evaporated milk
1 tbsp. flour
10 egg whites
2 egg yolks
1 green bell pepper, sliced
Tomato slices
Onion slices (optional)
Salt and pepper to taste

Cut open chilies; remove seeds and lay chilies flat on bottom of lightly greased 11 x 7 x 1 1/2-inch baking pan. Cover chilies with cheese slices.

Combine milk, flour, egg whites, yolks, salt and pepper; beat together 30 seconds with electric mixer. Pour in over chilies and cheese. Bake in slow oven (275 degrees) for 30 minutes.

Remove form oven; decorate with bell pepper and tomato slices. Return to oven and bake for an additional 30 minutes or until center is set.
