BUTTERSCOTCH YAMS | |
6 med. yams, cooked, peeled and quartered or 2 (17 oz.) cans, well drained 1/2 c. light or dark Karo corn syrup 1/2 c. firmly packed brown sugar 1/4 c. heavy cream 2 tbsp. butter 1/2 tsp. salt 1/2 tsp. cinnamon Arrange yams in single layer in 9x13x2 inch baking dish. Bake in 325 degree oven for 15 minutes. In heavy 2-quart saucepan, combine remaining ingredients. Stir constantly, bring to boil over medium heat and boil 5 minutes. Pour over yams. Bake, basting often, 15 minutes longer or until glazed. Makes 6 servings. MICROWAVE: All ingredients except canned yams, high (100%) 3-4 minutes. Add yams. Coat well, cook 6 minutes until glazed. |
