BEEF & BROWN RICE 
1 tsp. corn oil
2 med. onions or 6 scallions, chopped
3/4 lb. ground beef
2 c. cooked brown rice
1 clove garlic, peeled & minced
Salt & pepper to taste

1. Heat the oil in a skillet. Peel and chop the onions (if you use scallions, wash them and pat them dry before cutting). Saute the onions over medium-high heat for 7 to 10 minutes until golden.

2. Add the meat and saute, stirring now and then to keep both onions and meat from burning. Add the garlic, salt and pepper. Reduce the heat and cover.

3. Combine the brown rice with the contents of the skillet and mix together. If you are using leftover cooked rice from the refrigerator, add it to the meat, stir well, and cover while you heat the mixture over low heat for a few minutes until it is hot.
