VEGETABLE ROLL-UP (GREAT FOR
GUESTS!)
 
200 gr. potato skins (pre-cooked)
100 dl. water
3 tsp soy sauce
500 gr. flour
200 gr. potato flour
3 red hot chili peppers
2 eggs
400 gr. chickpeas
200 gr. sweetpeas
300 gr. dried tomatoes
200 gr. mango (sliced and diced)

Mix flour, potato flour and eggs well together.

Bake in oven at 200 degrees celsius for approximately 5-10 minutes until semi-done. This is the wrap. With mortar and pestle, grind chickpeas, sweetpeas. Add the dried tomatoes and the mango. Mix with spoon.

Add into the wrap and roll it up carefully.

Bake in oven at 270 degrees celsius for 15 minutes.
