CARROT CAKE 
2 c. sugar
3/4 c. vegetable oil
4 eggs (beaten)
2 c. plain flour
2 tsp. baking powder
1 (13x9) greased and floured cake pan
1 tsp. salt
1 1/2 tsp. baking soda
2 tsp. cinnamon
3 c. grated carrots
1/2 c. nuts (chopped)

Cream sugar and oil well, add eggs, beat well. Sift all dry ingredients together, add to sugar mixture, small amount at a time, beat well. Fold in carrots and nuts. Bake at 300 degrees for 30 to 35 minutes. DO NOT OVER BAKE!! Cool. Cream Cheese Icing delicious on this cake!
