IRISH POTATO BAKE 
8 med. potatoes, peeled and cooked
1 (8 oz.) cream cheese, softened
1 (8 oz.) sour cream
1/2 c. butter, melted (1 stick)
1/4 c. chopped chives (green onion tops)
1 clove garlic, minced
2 tsp. salt
Paprika

Beat cream cheese, sour cream, melted butter together. Mash potatoes. Mix in cream cheese mixture until smooth. Add chives, garlic and salt. Mix with all above. Bake in 2 quart casserole at 350 degrees for 30 minutes. Prepare ahead. Cover and refrigerate overnight. Sprinkle paprika on top.
