ZUCCHINI CASSEROLE | |
2-3 zucchini, slice 1 onion, sliced thin 13 oz. can tomato juice 1/4 tsp. salt 1/4 tsp. pepper 1/4 tsp. garlic salt 4 saltine crackers 6 slices American or Cheddar cheese Saute onion until golden in butter; drain. Mix onion, sliced zucchini, pepper, salt and garlic salt. Put in casserole. Cover with tomato juice or a small can of tomatoes. Add cracker crumbs for thickening. Bake at 350 degrees for 30-40 minutes. Cover with tin slices of cheese. Bake until done 10-15 minutes. |
