VEGETABLE BEEF SOUP 
1 lb. ground beef
1 tbsp. instant minced onion

1 c. tomato juice or 3 tbsp. ketchup
1 c. water

1 (10 oz.) pkg. frozen hash brown potatoes or 2 c. shredded potatoes
1 (10 oz.) pkg. frozen mixed vegetables
3 c. water
2 tsp. salt
1/4 tsp. pepper
1 tbsp. butter
1/4 tsp. oregano leaves

Simmer until vegetables are tender, about 10 minutes. 6-8 servings.
