COMPANY POTATO CASSEROLE 
6 lg. baking potatoes
1 c. sour cream
3 tbsp. chopped chives
Salt and pepper to taste
6 to 8 oz. sharp Cheddar cheese, grated
3/4 c. milk (approximately)
2 tbsp. butter

Bake potatoes for 1 hour in 400 degree oven. Remove skins and beat until chunky (do not mash potatoes). Add sour cream, chives, salt and pepper, one half of the cheese, and one half of the milk. Stir well; add remainder of milk as needed, but do not make the mixture soupy. Put into a greased 2 quart casserole. Top with remaining cheese. Cut up the butter over the top. Bake in 375 degree oven for about 40 minutes. Serves 8.
