1 egg 3/4 c. milk 1/2 c. oil 2 c. all purpose flour or whole wheat flour (I've used half & half) 1/3 c. sugar 3 tsp. baking powder 1 tsp. salt Heat oven to 400 degrees. Grease bottom only of about 12 medium muffin cups (cupcake pan). Beat egg, stir in milk and oil. Place flour, sugar, baking powder and salt in large bowl; mix well. Pour in egg mixture all at once. Stir gently only until flour is moistened. Batter will be a little lumpy. Fill muffin cups about 3/4 full. Bake until golden brown, about 20 minutes. Let cool a few minutes and remove from pan. VARIATIONS: APPLE AND NUT: Add to flour 1 medium apple, chopped and nuts. Or just apple. BANANA: Decrease milk to 1/3 cup. Stir in 1 cup mashed banana (2 to 3 medium) with milk mixture. In a double recipe I used 1/4 less milk and 2 medium bananas. ORANGE: Use 1/2 orange juice and 1/2 milk and some orange rind if you have it. |
