CHICKEN AND RICE WITH VEGETABLES 
1 c. cooked rice
1 hard boiled egg, chopped
1 oz. cooked chicken breast
2 oz. chopped carrots
1/2 oz. chopped scallions
2 tsp. butter
1 tsp. soy sauce (optional)
Water

Saute carrots and scallions in butter; add rice, soy sauce and liquid for moisture. Add chicken breast, egg and stir.
