LEMON-GLAZED CARROTS 
6-8 med. carrots, sliced
1 stick butter
1/2 c. brown sugar
1/8 c. lemon juice
1/2 tsp. grated lemon rind

Cover sliced carrots with water and boil until cooked, about 15-20 minutes. Drain carrots and set aside. In pan, mix lemon juice, rind and sugar and cook until sugar dissolves and thickens. Add carrots and cook 5 minutes.
