NO BAKE FRUIT CAKE | |
1 lb. graham crackers 1/2 tsp. nutmeg 8 oz. mixed diced candied fruit 1/4 tsp. ground cloves 1 c. chopped dates 1 (6 oz.) can evaporated milk 3/4 c. light seedless raisins 1/3 c. water 3/4 c. chopped walnuts 1 c. coconut 1/2 tsp. cinnamon 1 lb. miniature marshmallows Roll graham crackers to fine crumbs between 2 sheets of waxed paper. In a large bowl mix all ingredients thoroughly, except milk and water. Gradually add milk and water, mixing and kneading until all crumbs are moistened. Press firmly into waxed paper lined 8 1/2 x 4 1/2 x 2 1/2 inch loaf pan. Garnish with additional candied fruit and nuts if desired. Cover with aluminum foil. Refrigerate at least 2 days before serving. |
