WHITE TEXAS CAKE 
1/2 c. Crisco
2 c. flour
1 1/2 c. buttermilk
2 c. sugar
1/2 tsp. almond extract
1 tsp. baking soda
Pinch of salt
2 egg whites
1 tsp. vanilla

Cream Crisco and sugar. Add egg whites and beat. Mix dry ingredients together. Mix with creamed mixture alternating with the buttermilk. Add flavoring. Bake in 10x15 inch jelly roll pan at 350 degrees for 20-25 minutes. If pan is a bit larger, bake less time.

ICING:

1 stick butter
1 1/2 c. coconut
1/3 c. buttermilk
1 tsp. vanilla
1 lb. powdered sugar
1 c. chopped nuts

Melt butter. Add buttermilk, then rest of ingredients.
