SALMON PATTIES | |
1 (16 oz.) can pink salmon 1 egg 1/3 c. chopped onion 1/2 c. flour 1 1/2 tsp. baking powder 1 1/2 c. shortening Drain salmon, keeping 2 tablespoons of the liquid. Mix salmon, egg and onion in mixing bowl until mixture is sticky. Stir in flour. Add baking powder to the 2 tablespoons of the reserved liquid. Stir into salmon mixture. Form into small patties, using hands. Place shortening in large skillet. Fry patties in shortening over medium heat for 5 minutes. Turn patties once while frying. Place patties on several layers of paper towel to drain. Yield 4 to 6 servings. |
