RED PEPPER JELLY 
3 lg. green peppers
5 c. sugar
1 1/2 c. white vinegar
1/4 c. cayenne pepper
1 tsp. red food coloring
1 pkg. Certo

Chop peppers (including seeds) and place in blender with 3/4 cup vinegar and blend until smooth. Add remaining vinegar to blender. Mix. Place in large pot and add sugar, cayenne pepper and food coloring. Bring to boil, stirring constantly; let boil for 5 minutes, let stand for 2 minutes then add Certo. Place in clean jars and seal immediately. Makes 8 half pints. Delicious served with cream cheese on Ritz crackers.
