PIMENTO CHEESE 
1 lb. Velveeta cheese
1 beaten egg
1/4 c. milk
3 tsp. sugar
8 oz. pimentos
1/4 c. vinegar
1 c. mayonnaise

Melt cheese in double boiler. Add egg, milk, sugar, pimentos, add vinegar very slowly to this mixture. Cook for 30 minutes in a low-medium heat in double boiler. Cool mixture. Add 1 cup mayonnaise. Makes 1 quart.
