CARAMEL FROSTING USING
GRANULATED SUGAR
 
2 1/2 c. granulated sugar (divide into 2 cups and 1/2 cup)
1 c. milk
1/4 c. butter
1 tsp. vanilla
Other flavorings (optional)

Combine the two cups sugar and milk in a heavy saucepan. Bring to a boil over moderate heat until mixture reaches soft-ball stage (232 degrees on candy thermometer; or drop of mixture forms a soft ball when dropped into cold water). Remove from heat, set aside. Place the other 1/2 cup granulated sugar into a heavy skillet. Cook over moderate heat, stirring constantly, until golden brown or caramelized. Stir into the other mixture. Add butter and flavorings. Beat at high speed of electric mixer for 5 minutes. Mixture will thicken as it cools.

Worked like a charm in a pinch. Everyone thought I was a master chef. Though the soft-ball stage is much hotter than I thought it would be. But be patient it works.

I really enjoyed this recipe. I have leftover so I need to figure out what else it would be good with... cut up fruit! Definitely be patient with process... but well worth the wait

Really easy to make, although I would say it's not a proper frosting, it's fudge. If there's any left overs once it's cooled you can pick it up with your hands and roll into small balls for nice treats! Thanks
