PANCAKES 
1 1/2 c. flour
1 1/2 tsp. baking powder
3/4 tsp. salt
1 tbsp. sugar
1 egg, beaten
1 c. milk (buttermilk)
2 tbsp. melted shortening or oil

Sift dry ingredients together. Combine the egg, milk and shortening. Add gradually to the dry ingredients; stir only until batter is smooth.

Drop by spoonfuls onto hot griddle. Cook slowly until the surface is covered with bubbles. Turn and cook until bottom is well browned.

To make Montana Pumpkin Pancakes, add 3/4 teaspoon pumpkin pie spice and 1/2 cup pumpkin or squash to above pancakes.
