TURKEY TACOS 
1 tbsp. vegetable oil
1 sm. onion, chopped
1 garlic clove, minced
1 lb. ground turkey
8 oz. jar taco sauce
2 tbsp. chopped, seeded jalapeno peppers
1 tsp. chili powder
1 tsp. ground cumin
Salt to taste
8 taco shells
1 avocado, diced
6 oz. shredded Monterey Jack or Cheddar Cheese
Lettuce, shredded

Heat oil in medium skillet over medium heat. Add onion and garlic and cook for 3 minutes. Add turkey and cook, breaking up with wooden spoon until no longer pink, 5 minutes. Add taco sauce, jalapeno pepper, chili powder, cumin, salt to taste and cook until thickened and flavors are blended, 10 minutes. Spoon mixture into taco shells. Top with avocado, tomato, shredded cheese and lettuce. Yield 4 servings.
