PINEAPPLE CHICKEN 
2 egg yolks
2/3 c. water
3 tbsp. flour
A pinch salt
1 tsp. soy sauce
1 1/2 c. cooked chicken in bite size pieces
Oil for frying
1 tsp. cornstarch
1/4 c. chicken broth
1/2 tsp. powdered ginger
1/2 c. pineapple juice
1 c. canned pineapple chunks

Mix together egg yolks, water, flour, salt and half the soy sauce. Dip chicken pieces in this flour mixture and fry in oil until brown.

Mix together cornstarch, chicken broth, ginger, the rest of the soy sauce and the pineapple juice. Place this in a pot and boil until it gets thick. Add the pineapple chunks. Pour over the chicken. Serve it hot with rice. Serves 4.
