MACARONI WITH RIGOTTA AND BACON 
2 slices bacon, chopped
1 onion, chopped
1/4 c. olive oil
1 lb. ricotta
1/4 c. parsley
1/4 c. basil
1 tbsp. scallions, chopped
1 1/3 c. Parmesan cheese
1/2 tsp. salt
1/4 tsp. pepper
1 lb. rigotti

Cook bacon until lightly browned. Cook until onion is softened. In bowl put rigotta, parsley and 1/3 cup cheese.
