SHRIMP JAMBALAYA 
4 tbsp. cooking oil
3 tbsp. flour
2 med. sized onions, chopped
1 clove garlic, chopped
1 med. sized green pepper
1 can tomato sauce (8 oz. size)
2 c. water
2 c. cleaned shrimp
Salt & pepper to taste
2 c. cooked rice
Parsley and green onion rings for garnish

Cook flour and cooking oil until very light brown. Add chopped onions, green pepper and garlic. Cook until onions are soft. Add tomato sauce, water, shrimp, salt and pepper. Simmer 30 minutes. Add cooked rice and simmer 5 minutes longer. Serve hot. Garnish with parsley and green onion rings.
