SOUTHWESTERN SCRAMBLED EGGS 
1/2 c. bacon cubes
6 tbsp. water
1/2 c. diced onions with green tops
1/2 c. diced cheese
1/8 c. chopped parsley (reserve some for top)
1/8 tsp. pepper
1/4 tsp. garlic and onion
Salt
4-6 eggs
1/4 c. diced chili pepper
1/4 c. green or red peppers
1/4 tsp. salt
1/2 c. fresh tomatoes

Fry bacon cubes in large skillet. Beat eggs with water slightly. Add salts, pepper, chili and sweet peppers, onions and tops and mix it all together.

Place in skillet with bacon cubes. Stir until almost done; add tomatoes and cheese. Serve hot with paprika sprinkled on top with chopped parsley. Serves 6.
