PUMPKIN STREUSEL MUFFINS 
2 1/2 c. plain flour
2 c. sugar
1 tbsp. of mixed spices (cinnamon, cloves, nutmeg)
1 tsp. baking soda
1/2 tsp. salt
2 eggs (slightly beaten)
1 c. canned pumpkin
1/2 c. oil
2 c. sliced apples

Combine first 5 ingredients, set aside. In large bowl, mix eggs, pumpkin, and oil, add apples along with dry ingredients. Fill tins 3/4 full. Sprinkle with streusel mixture.

STREUSEL TOPPING:

2 tbsp. flour
1/4 c. sugar
1/2 tsp. cinnamon

Mix ingredients and cut in 4 tablespoons of butter until mixture is crumbly. Bake at 350 degrees for 30 to 40 minutes.
