LENTIL SOUP | |
8 c. water 2 c. lentils 1 large onion, chopped 1 med. carrot, chopped 1/2 green pepper, chopped 1 qt. tomatoes, canned 1 large celery stalk, w/leaves, chopped 1 bay leaf 1 tsp. salt dashes of soy sauce Mix together all ingredients except soy sauce in large pan of water. Cover and bring to boil; reduce heat. When everything is cooking well; add soy sauce (this is the secret ingredient). Simmer for 2 1/2 hours or until lentils are soft. The soup will be fairly thick. For thinner soup, add less lentils or more water. |
