CHINESE RICE 
1 c. uncooked rice
1/2 c. frozen peas
1/2 c. frozen carrots
3 scallions, chopped
1/4 lb. baby shrimp
2 eggs
3 tbsp. soy sauce
Salt
Pepper
Garlic salt
1/4 lb. butter

Cook rice; drain. Put rice in frying pan with melted butter (medium heat). Add next 3 ingredients (peas, carrots, and scallions). Cook 3-5 minutes, stirring frequently. Scramble eggs; add to rice mixture. Stir until egg mixture sets. Add soy sauce, seasonings, and shrimp. Cook an additional 5 minutes on low heat. Serve.
