FAMILY FISH CAKES 
1 lg. potatoes
1 lb. fresh fish
1 garlic clove, crushed
2 egg whites
1 med. carrot, grated
2 tbsp. chopped onion
2 tbsp. lemon juice
1/2 tsp. salt
1/2 tsp. season salt
8-10 crushed Ritz crackers
Sprig of minced parsley or a bay leaf (optional)

Bake or boil potato and mash; set aside. Cook fish in 12 inch skillet in 1 cup of water for 10 minutes, breaking fish into bite-size pieces; drain. Stir together all ingredients and shape into patties. In 12 inch skillet heat 3 tablespoons oil and brown patties about 8 minutes on each side.
