VINEGAR PIE FILLING 
1 c. sugar
2 eggs
2 tbsp. vinegar
2 tbsp. flour or cornstarch
1 c. water
1/4 stick butter
1/2 tsp. lemon extract

Mix first 5 ingredients in double boiler and cook until thick and smooth. Just before removing from heat, add butter and extract. Pour into prebaked pie crust and cool.
