GWEN'S SPICY SAUSAGE & CLAM SOUP | |
1 lb. hot Italian sausage 1 lb. fresh mushrooms, chopped 2 c. sliced onion 1 (28 oz.) can whole tomatoes 1 c. dry white wine 1 c. clam juice 2 tbsp. fresh or 2 tsp. dried basil 1 tbsp. garlic, minced 1 lg. bunch parsley, chopped 6 oz. littleneck clams, scrubbed (opt.) Brown sausage, onions and mushrooms in large pot. Add remaining ingredients. Bring to boil; reduce heat and simmer, covered, 30 minutes. Serve with crusty bread. |
