CRAB BURRITOS 
2 tbsp. shortening
2 tbsp. chopped green peppers
2 tbsp. chopped onions
3 tbsp. all-purpose flour
3/4 c. tomato juice
1/2 c. milk
1 c. (1/4 lb.) shredded mild Mexican cheese spread
1 1/2 c. crab meat
Salt and pepper, if needed
8 (7 inch) flour tortillas

Saute onion and pepper in shortening for 5 minutes on medium heat. Add flour, blending well. Add tomato juice gradually while stirring; cook until thickened. Add milk gradually. Stir until smooth. Add cheese; cook until melted. Add crab meat and heat thoroughly.

Place 1/3 cup mixture on each tortilla. Fold according to package directions. Bake at 350 degrees for 15 minutes in covered dish. Serve with cheese sauce or picante sauce.

CHEESE SAUCE:

Melt 1/2 pound mild Mexican cheese with 1/4 cup milk. Makes 4 servings.
