LO - CAL LEMON MOUSSE 
1 c. sugar
1/2 c. cornstarch
3 c. skim milk
1/2 c. fresh lemon juice
1 drop yellow food coloring (optional)
4 egg whites
1 1/2 tsp. grated lemon rind
Sliced strawberries

Stir together 3/4 cup sugar and cornstarch in saucepan. Gradually stir in milk until smooth. Bring to a boil over medium heat, stirrin constantly, boil 1 minute. Remove from heat. Stir in rind, juice and coloring. Beat egg whites and remaining sugar until soft peaks form. Gently fold into lemon mixture. Spoon into serving bowl and chill until firm, about 4 hours. Serve with sliced strawberries. 140 calories per serving without strawberries. Serves 10.
