HOT POTATOES 
8 potatoes
1 lg. onion
Salt
1 jar chopped pimentos
1/2 can chopped green chiles
3 inches of 2 lb. size Velveeta cheese

Slice potatoes and onion in sauce pan; just cover with water, add salt, and cook until done. Drain off water, leave enough water to cover bottom and reserving the rest in case needed. Add pimentos, green chilies and Velveeta cheese. Add more potato water if needed for desired consistency. To serve, heat in pan or put in casserole dish and heat at 350.
