SPANISH CASSEROLE 
3 lbs. ground beef, browned and seasoned
1 sm. onion, chopped fine and browned

Add: 1 can cream of tomato soup 1 can enchilada sauce (10 oz. mild) 1 can mushrooms 1 sm. (8 oz.) can taco sauce (hot if desired, I use 1/2 can mild and 1/2 can hot)

Mix all above ingredients together. Simmer. Grated Cheddar cheese

Put layers of tortillas, layer of meat mixture, layer of grated cheese in 9x13 baking dish. Make several layers. Top with cheese. Bake at 300 degrees for 1 1/2 hours. Serves 8-10.
