TAVERN SPOON BREAD | |
1/2 c. club soda 1 lg. egg 1 tsp. vanilla 1/2 c. sugar 1 1/2 c. biscuit mix 1/4 tsp. mace (flavor is similar to nutmeg) 1 c. light raisins moistened in water & dredged in flour may be added or 1 c. floured fresh blueberries Beat soda, egg and vanilla lightly with a fork just to blend. Mix sugar, biscuit mix and mace (or other spice) just to combine. Then beat the 2 mixtures together using medium speed and scrape sides and bottom of bowl. Pour into greased and floured 1 quart casserole dish. Bake at 400 degrees for 20 minutes and at once reduce oven to 350 degrees for another 10 minutes. Take out of oven, brush top with soft butter and dust lightly in sugar. Let cool 30 minutes before slicing in 6 wedges. |
