APPLE CAKE 
1 1/2 c. vegetable oil
2 c. sugar
3 eggs, beaten
3 c. sifted flour
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1 tsp. vanilla
1 tsp. lemon extract
3 c. sliced apples (any tart apple, like Granny Smith)
1 c. chopped pecans (or walnuts)

GLAZE:

1 c. confectioners' sugar
Juice of 2 lemons (or 4 tbsp. lemon juice)

Preheat oven to 300 degrees. Combine oil and sugar. Blend in eggs. Combine flour, soda, salt and cinnamon. Add to oil mixture. Add vanilla and lemon. Add apples and nuts. NOTE: Batter will be very stiff.

Bake in greased 13 x 9 inch pan for 1 hour and 20 minutes at 300 degrees. While still warm, cover with glaze.

To make glaze: Mix confectioners' sugar and lemon juice into a smooth paste. Drizzle over cake.
